When I made it for the first time, I was speechless. I really didn’t believe this bread could be so good. I created my own version by adding grated Parmesan cheese and Pecorino to the dough. I find it excellent to accompany a meal but also as an appetizer to share with friends and family. For me, it is super approved and tested. Considering the few ingredients needed, it seems impossible to be so special. To me, they look like giant pancakes, although they are not fried. What do you think, shall we prepare them?

Ingredients
Let’s see the few ingredients needed to cook them.
- 0% fat Greek yogurt (4.6 oz plain natural)
- extra virgin olive oil (1 tbsp)
- to taste spices (various, parsley, garlic, pepper)
- to taste fine salt
- all-purpose flour (4.8 oz)
- instant yeast for savory preparations (0.35 oz)
- 2 tablespoons grated Parmesan cheese (or 1 tablespoon Parmesan + 1 tablespoon Pecorino)
Steps
Let’s start assembling the ingredients.
It will be simple and quick. Take a container and start pouring the yogurt, mix it a little, add the oil, spices, grated cheese, yeast, flour, and salt. When I prepare leavened dough, I always add the salt last to not interfere with the leavening process. Let’s then mix our ingredients first with a spatula or a fork, as you prefer, and then work with your hands to form the dough. It should be nice and soft.
Now divide the dough into 5 balls and roll them out with a rolling pin. I usually make disks about 8 inches in diameter, nice and thin. Heat up a previously oiled pan and pour in the dough disks. You’ll see them start to puff up.
Once flipped on both sides, our bread will be cooked, ready to be brushed on top with oil and parsley. You can enjoy it as it is in its basic version to accompany your meal, or as a delicious appetizer along with cheese and cured meats. What can I say, enjoy your meal.
