Ingredients

Let’s see what ingredients we need to make the orange and chocolate cookies

  • 2 1/2 cups spelt flour
  • 2/3 cups rice flour
  • 1 orange zest (one whole grated)
  • 3/4 oz chocolate chips
  • 1/4 cups sugar (you can go up to 1/3 cup, I prefer less sweet)
  • 7 tbsp vegetable oil
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 1 packet vanillin
  • to taste anise seeds (if you like, optional)
  • 1 pinch fine salt

To prepare the cookies, you need a bowl, a fork, a pastry board, and a baking sheet to bake the cookies.

Steps

LET’S PREPARE THE DOUGH

  • In a bowl, pour the sugar and grate the zest of an orange. Use a fork to crush and mix together the sugar and citrus zest.

    This step will release even more of the orange aroma into the preparation.

    Next, add the oil, the milk, the pinch of salt, the packet of vanillin, and the chocolate chips.

    Mix the previous ingredients well and now incorporate the baking powder and the flour using a sieve. It’s better to do this a little at a time to gradually absorb into the dough.

    Once the dough is ready, I divided it into two parts, because as I mentioned on Instagram, I wanted to make two versions, so I added anise seeds to one part of the dough, which I think goes perfectly with orange and chocolate. You can adjust to your taste and preference.

    If you have time, let the dough rest in the fridge for about twenty minutes, before cutting the cookies, but it’s not necessary.

  • At this point, I took the dough, created logs, and cut them with a knife. About one centimeter thick.

    I placed the cookies on a baking sheet lined with parchment paper. I turned on the oven to the ventilated mode, 350 degrees Fahrenheit and once hot, I baked the cookies for 15/16 minutes.

    As soon as they start to bake, you’ll smell the aroma of these cookies, simple yet wholesome and homemade.

As you can see from the images, I gave the cookies two shapes. One is cut with a knife, the other is simple balls made from pieces of dough rounded between the hands to form a ball.
