Orange Cake

Hello and welcome back with a new recipe, today I present to you the orange cake. This treat is light, low in fats and sugars.

It is so soft that it almost seems moist inside. You have to try it, and I am sure it will win you over. Shall we prepare it?

Ingredients

Let’s see the simple ingredients we need to prepare the Orange Cake

Low sugar content

No butter

A lot of vitamin C

  • sugar (1/4 cup if you like it sweeter you can go up to 1/3 cup)
  • 2 eggs
  • orange juice (5 tablespoons freshly squeezed)
  • orange zest (of a whole edible peel orange)
  • vegetable oil (1/4 cup)
  • vanilla essence (I use the liquid one in a tube or vanilla powder)
  • spelt flour (1 cup, you can also use all-purpose flour, in that case, 1 cup plus 1 tablespoon)
  • 1 pinch fine salt
  • Half packet baking powder for desserts

Tools

To make the orange cake you won’t need any special tools, I worked everything with a fork, not even a whisk.

Steps

Let’s see the very simple steps that will lead you to make the orange cake.

  • In a bowl beat the eggs with the sugar

    Then add the orange juice, oil, grated peel of a whole orange, and vanilla. 

  • Now add sifted flour and baking powder. 

    In a greased and floured pan or lined with parchment paper, pour the batter and bake in a preheated static oven at 340°F for about 25/30 minutes.

    After this time, check, because being a small cake it should not bake beyond the estimated time. Do the toothpick test.

    As you can see from the photo, it didn’t come out high because I used a rectangular pan.

    If you prefer a taller cake, the pan should have a diameter of 7/8 inches.

    Being taller or shorter obviously will not compromise the softness of the cake. It’s just a matter of aesthetics and taste.

  • Now you can enjoy the Orange Bread that I am proud of, without presumption, of course.

Tips: the cake keeps perfectly under a glass dome for 3/4 days, if it doesn’t finish before.

Suggestions: By doubling the doses, once I made it as a birthday cake. I simply put pastry cream in the middle and covered with whipped cream. Wet it very little because it’s already super soft.
