Pan Cake

Ingredients

  • 1 3/4 cups flour
  • 2 1/2 tbsp sugar
  • 2 tsp baking powder
  • 1 pinch fine salt
  • 3 1/2 tbsp vegetable oil
  • 3/4 cup water
  • 1 banana
  • as needed jam
  • 1 packet vanillin
  • 1 lemon (zest and juice)

Steps

LET’S PREPARE THE DOUGH

  • In a bowl, sift the flour and baking powder. Add the water, oil, lemon zest and juice, sugar, and a mashed banana, preferably ripe.

    Mix all the ingredients well together to form a smooth and homogeneous mixture.

    At this point, take a pan and line the bottom and sides with parchment paper. Pour the mixture inside.

  • Before putting the cake to cook on the stovetop, garnish the cake with teaspoons of jam. I chose a sugar-free plum jam. Choose the one you like and prefer

  • Once garnished, turn on the gas burner or induction cooktop.

    Whether you have a gas burner or induction, the cooking should be on low heat for 15 minutes on one side and 6/7 on the other. Cover it and start cooking.

    The cake should be flipped like an omelet, so before doing this, make sure it has set on the surface, otherwise you risk sticking it to the lid while turning it.

  • The cake is ready to be enjoyed.

The pan cake should be stored in the refrigerator, preferably when it contains fruit and jam, especially in warm periods.
