Steps

  • Clean the broccolini (if fresh), removing the toughest stems and separating the florets.

    In a large pan, heat the extra virgin olive oil with the garlic cloves chopped into pieces.

    Add the broccolini and sauté over high heat for a few minutes, stirring, without letting them brown too much.

    Add a pinch of salt and, if you like, a little chili pepper.

    Cover with a lid and cook over medium heat for about 8–10 minutes, stirring occasionally.

    If you prefer them softer, continue cooking for a few more minutes until you reach the desired texture.

    If needed, add one or two tablespoons of water to help cooking and prevent them from drying out.

    At the end of cooking, you can add Taggiasca olives and pine nuts for an extra touch of flavor.
