Pastry cookies are delightful mini treats, made with a butter and extra virgin olive oil shortcrust pastry, with a heart of creme caramel pudding in the center.
These little cookies are prepared with a simple dough, without using a mixer or any other tools, you will need a bowl, a fork, and then your hands to finish everything.

Ingredients
Let’s see the ingredients needed to make the recipe:
- eggs (whole)
- 2 oz oz butter
- 2 teaspoons baking powder
- orange zest (grated from 1 whole orange)
- 2 3/4 cups cups spelt flour
- 1/4 cup cup sugar (you can use even 1/3 cup if you prefer)
- 2 3/4 tablespoons tablespoons extra virgin olive oil
- A few drops vanilla essence
- 1 pinch fine salt
- as needed custard (creme caramel pudding or jam)

Steps
Take a bowl and pour in the eggs, sugar, and grated orange zest. Start mixing with a whisk or fork.
Now add also the pinch of salt, vanilla essence, softened butter, and extra virgin olive oil.
Finally, incorporate the flour and vanilla-flavored baking powder. As for the flour, I used spelt flour, but if you want to use all-purpose flour or another type, no problem, it may just affect the liquid absorption, so for all-purpose flour, you might need a bit more to compact properly.
Once the dough is assembled, it should always be soft but not sticky to the touch. At this point, place the dough in a container covered with plastic wrap and let it rest in the fridge for half an hour.
After the resting time, take the dough and roll out the shortcrust pastry.
With a ravioli cutter, I shaped them into the square form you see and then decorated the cookie, creating a frame with many holes made with a simple wooden skewer stick.
At this point, I wanted to make my pastry cookies more delicious by putting in the center a scant teaspoon of creme caramel pudding.
You can use the ones found in yogurt-like jars sold in supermarkets. Instead of the pudding, you can also use any jam you prefer. They will be just as delicious.
Place the cookies on a baking tray lined with parchment paper or silicone mats and bake in a preheated oven at 340°F (170°C) static for about 18 minutes.
Storage
The cookies can be stored for 2-3 days in a glass or tin container.
