Pear and Blueberry Cake

Ingredients

Let’s see what we need to prepare the cake:

  • 2 eggs
  • 150 g plain yogurt
  • 40 sugar (But if you prefer, you can increase)
  • 90 g extra virgin olive oil
  • 1 pinch salt
  • 1 lemon zest (Grated)
  • 230 g type 2 flour (But you can also use other types like zero, one)
  • 10 g baking powder
  • 70 g blueberries
  • 2 pears (One for garnish, one to cut into the batter)

  • 1 Pan
  • 1 Bowl
  • 1 Knife
  • 1 Spatula

Steps

  • In a bowl, mix the sugar with the lemon zest.

    Add the yogurt and the pinch of salt.

    Add the extra virgin olive oil (or seed oil if you prefer).

    Break the eggs inside and add one pear cut into cubes.


    I added the blueberries after pouring the batter into the pan so I didn’t crush them.


  • Gradually incorporate the sifted flour and baking powder.


    Line the pan with parchment paper or grease and flour it.


    The 20/22 cm pan will make the cake higher.


    Bake at 338°F (170°C) static for 40 minutes.
