Pineapple and Jam Shortcrust Braid

The pineapple and jam shortcrust braid is an easy and light treat to enjoy.

The base is made with a genuine and fragrant oil-based shortcrust pastry and then filled with a layer of jam (or jam and ricotta) and pieces of pineapple.

Ingredients

Let’s see the ingredients we need to prepare the pineapple and jam shortcrust braid

  • 2 eggs
  • 3 oz sugar
  • 1/3 cup vegetable oil (sunflower or corn)
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1 orange zest (grated)
  • as needed pineapple (cut into pieces)
  • 3 tbsp jam (to taste, I used cherry)
  • 3 1/2 oz ricotta

  • 1 Baking sheet
  • 1 Pastry cutter
  • 1 Rolling pin

Steps

  • In a mixing bowl, break the eggs (which you have left at room temperature), add a pinch of salt, the sugar, and start mixing with a fork.

    Add the oil, grated orange zest, and mix again.

    At this point, start incorporating the dry ingredients, sifted flour, and baking powder. Add them gradually, and when it’s no longer possible to work with the fork, use your hands.

    You will get a smooth and soft dough.

  • With a rolling pin, roll out the dough on a floured surface into a rectangle shape and make lateral cuts. These strips will be used to create the braid over the central filling.

    The base filling can be just jam, or as I did, a layer of ricotta and jam, ending with pieces of fresh pineapple.

    After adding all the filling ingredients, cross the strips of dough to form a braid.

    Bake in a preheated static oven at 340°F for about 30 minutes. Always check the dessert before turning off the oven and removing it. It should be golden and not soft.
