Pizza

Pizza needs no descriptive preambles, when mentioned it’s already a celebration.

White, red, thin, in a pan, delicious in every way.

Today I give you my recipe which has been tested, approved, and eaten many times by my family and friends.

The secret of this preparation lies in the folds of the dough and the mix of flours used.

Ingredients

  • 2 1/8 cups water
  • 1 tsp sugar
  • 1 tsp fresh brewer's yeast
  • 1 tbsp extra virgin olive oil
  • 3 3/4 cups type 2 flour
  • 2 2/3 cups remilled durum wheat semolina flour (whole grain)
  • 2 tsp fine salt

As I mentioned in the introduction, I prepared the dough with my KitchenAid stand mixer, for which I provide all the details should you wish to purchase one.

  • 1 Stand Mixer
  • 3 Baking Sheets
  • 1 Kneading Board
  • 1 Spatula

Steps

  • You decide whether to prepare it in the stand mixer or by hand in a bowl and then on the kneading board.

    The result will be the same.

    I use the stand mixer to save time, even though I love handling dough by hand.

    Pour the water into the mixer bowl and add yeast and sugar.

    Mix these ingredients and then start incorporating the flours gradually.

    You can start with the one you prefer, it doesn’t matter.

    When you’ve poured about half of the total flour, also add the oil and continue working, or let the stand mixer run.

    Add the salt and then the rest of the flour.

    The dough will be slightly sticky but add another sprinkle of flour and divide the mixture into three dough balls.

    Place in glass containers dusted with flour and cover with plastic wrap.

    At this point, we are ready to let the dough rise in the fridge, until the next morning (long rise).

    In the morning around 10/11 take it out of the fridge and place the containers in the turned-off oven until 1 PM.

    As shown in the VIDEO, retrieve the dough, roll it out on the board, fold it, and let each dough ball rise directly in the greased pan.

    After three hours the dough ball will be soft and ready to be rolled out in the baking sheet.

    Let it rise again until about 6:30 PM, when it’s time to top it.

  • The pizza dough will be nice and soft with bubbles.

    Top it as you like, with tomato, olives, only cheeses, your choice.

    Switch the oven to static mode 375 degrees and bake for about 20 minutes.

    Always check according to your oven.

    The size of my pans is 15 inches each. With these measurements, you get three pizzas.

    Bake and being careful not to burn yourself, dive into this soft and super tasty preparation.

Pizza Storage Tips

If pizza is leftover, you can store it in the refrigerator or even in the freezer.

Store in the fridge for two to three days and reheat in the oven before consuming again.

Believe me, it will regain its softness perfectly.
