Potato cakes are a deliciously tasty second course. Super easy to make and wonderfully enjoyable to devour.

They can be made filled with cheese, vegetables, or cured meats but also simply with grated Parmesan and nothing else.

Ingredients

Let’s see the simple and few ingredients needed to make potato cakes

  • potatoes (1.1 lbs peeled)
  • grated Parmesan cheese (1/3 cup)
  • extra virgin olive oil (2 tsp)
  • potato starch (3 tbsps)
  • to taste nutmeg
  • to taste fine salt
  • 1 egg

No special tools required. A mixing bowl, a pan, fork, a spatula, and a spoon

Steps

  • Peel and boil the potatoes in salted water, after cutting them into pieces.

    Once they are soft, drain them and place them in your mixing bowl to prepare the dough.

    Mash the potatoes with a fork, adjust the salt if needed, add the oil, Parmesan, egg, nutmeg, and gradually the potato starch.

    Once all the ingredients are mixed, the dough will be rather soft. You’ll need to use a spoon to place them in the pan, not your hands.

  • As mentioned, take a portion with a spoon and place it in a slightly greased and preheated pan, trying to shape it as round as possible.

    Even if they turn out more elongated and not perfectly round, what’s important is the delicate taste you’ll enjoy.

    The cakes should cook for about 6/7 minutes per side until nicely golden and crusty. With this method, they will be crispy on the outside and soft inside.

Tips and variations for potato cakes

You can also make stuffed potato cakes. Just use the same ingredients but change the amount of starch from 3 tbsps to 5/6 tbsps and optionally do not use the egg.

The dough will be firmer and this time you can shape the cakes with your hands, as the extra starch will prevent sticking. This way, make a ball with your hands, press it a bit in your palm, after dusting your hand with flour, and add a piece of cheese and your preferred cured meat in the center.

I also tried stuffing them with previously cooked vegetables, like cabbage or your favorite. Of course, the texture will be firmer with this second method, resembling fried calzones, which are softer inside.
