Ingredients

  • radicchio (12 oz)
  • 2 cloves garlic (you can also use garlic powder)
  • 3 teaspoons Taggiasca olives
  • to taste extra virgin olive oil
  • pasta (12 oz, I chose penne)
  • to taste fine salt
  • to taste grated Parmesan

Steps

  • First, take your head of vegetable, and wash it well under running water. Once ready, cut the vegetable and place it in a saucepan.

    The beauty of this dish is that it gives you a lot of flavor even though nothing is fried or sautéed. You know my goal is always that. To offer tasty ideas and tips while always balancing in mindful preparations.

    Let it wilt over low heat in its own water that will be released during cooking. As soon as you see it reducing in volume, add to the pot, the Taggiasca olives, EVO oil, a pinch of salt, and the garlic.

    Cover the saucepan and let it cook. After 20 minutes check and verify the cooking and seasoning of the vegetable. If needed, adjust the salt and let it cook until done.

    Once ready, leave it in the pan, where we’ll later toss the pasta.

  • Boil the water and add the short pasta you like best. This time I chose penne.

    Once the pasta is ready, drain it and add it to the pan, also adding 1 or 2 tablespoons of the cooking water.

    Mix well over slightly higher heat and plate.

    Add another drizzle of EVO oil to the pasta and a nice sprinkle of Parmesan if you like. Enjoy your meal!

If you want to make the seasoning even more appetizing, if you have in the fridge some spreadable cheese, you can add it along with the rest of the seasoning, once you are tossing the pasta in the pan.
