Ricotta and Fruit Cups

The ricotta and fruit cups, are a refreshing preparation that will give you goodness and lightness.

Ingredients

Let’s see what ingredients are needed to prepare this delicious little recipe

  • as needed fresh fruit (for me 2 apricots, 2 plums, 1 peach and a piece of watermelon)
  • 5.3 oz ricotta
  • 1 Greek yogurt
  • as needed cookies (I used whole grain)
  • as needed lemon zest (grated)

Tools

No special tools needed, you’ll need a bowl, a fork or a hand whisk to mix

Steps

  • In a bowl, mix together the ricotta, yogurt and a little grated lemon zest. Stir well to eliminate any lumps, it should become a nice smooth and silky cream. Once ready, set aside

  • Now let’s prepare the fresh fruit smoothie which we will use partly as the final topping but also within the preparation.

    Choose the fresh fruit you like best, I used a large peach, 2 apricots, 2 plums, small black prunes, and a slice of watermelon. After peeling the fruit, I blended it in a food processor or classic blender.

    You will get a delicious and genuine fruit puree.

  • Now we can start assembling our ricotta and fruit cups.

    Take the ricotta and yogurt cream and pour some of the blended fruit inside.

    Now, at the bottom of each cup, start creating a base of crumbled cookies, it’s up to you how much you want to crumble per layer.

    Then, layer of cookies, layer of cream and then again layer of cookies and layer of cream. Finish off the cup by covering with a layer of blended fruit and a few more cookie crumbs.

    Place the cups in the fridge and let them set for about two hours. They will be perfect for a delicious snack, a light dessert, and why not, a great fresh and complete breakfast.

Storage

The cups should be stored in the fridge, to give the preparation freshness and tastiness but especially because they are made with fresh ingredients.
