Ricotta Cake

The ricotta cake. Cakes with ricotta dough and creams are among my favorites.

I believe this fantastic dairy product is excellent for both savory and sweet preparations.

Its creaminess and especially its lightness do not weigh down the dishes, while adding so much flavor and delicacy.

Ingredients

Let’s see what ingredients to use to prepare the ricotta cake

  • brown sugar (3/8 cup, you can add up to 1/2 cup and also use white sugar)
  • spelt flour (1 3/4 cups, you can also use all-purpose or cake flour)
  • butter (5 1/4 tbsp)
  • 2 eggs
  • ricotta (8 3/4 oz)
  • to taste ground cinnamon
  • 1 pinch fine salt
  • 1 packet baking powder
  • to taste powdered sugar (optional)
  • orange zest (I used the zest of a whole orange)
  • milk (1/4 cup)
  • chocolate (chocolate balls or pralines optional for decoration)
  • pine nuts (optional for decoration)

Steps

Here we are ready to prepare our little cake.

  • Take a bowl and start working the sugar with the eggs. Add the softened butter, orange zest, and ricotta.

    Now mix the ingredients well, the batter should be creamy.

  • Add the cinnamon and the milk. Keep mixing. At this point, before adding the packet of baking powder, I put aside the mixers and start mixing with a spatula.

    Then mix in the baking powder and flour by sifting them in gradually.

  • Our batter will be thick but nice and fluffy. It should be smooth and soft.

    Take a baking pan (I use a 8-9 inch one to make it nice and tall), butter and flour it or line with parchment paper, pour the batter in and start decorating.

    I used chocolate balls that I call nuggets with a coffee bean inside and finished with pine nuts, which I love.

    The decoration is always to our liking, you can also use chocolate chips or flakes or just nuts, pine nuts, almonds.

  • Preheat the oven and bake in static mode at 340°F for about 40 minutes. Always do a toothpick test. Let cool, unmold the cake and enjoy this soft delight.
