Welcome dear friends, today I tell you about the savory bell pepper tart, with buckwheat flour. I made this base with two flours, one gluten-free and the other a type 1 flour. The experiment worked very well. This dough is elastic and you can work it and roll it out with a rolling pin until it becomes as thin as a veil. The tart base remained light, crumbly and being nice and thin, crunchy on top. Shall we prepare it together? Let’s go to the kitchen.

Ingredients
Let’s see the ingredients we need to prepare the savory bell pepper tart.
- type 1 flour (110g you can also use all-purpose or 00 flour)
- buckwheat flour (100g)
- extra virgin olive oil (46g)
- 1 teaspoon fine salt
- water (90g)
- bell peppers (3 medium)
- as needed extra virgin olive oil (for seasoning peppers)
- 2 cloves garlic
- 3 tablespoons balsamic vinegar
- 2 teaspoons sugar (to caramelize the peppers (optional))
- salt (to season peppers)
- ricotta (120g or provolone slices)
- pumpkin seeds (optional if you like them)
- 2 teaspoons Taggiasca olives (you can also use green olives if you prefer)
- grated Parmesan cheese (30g)
Steps
Let’s see the steps to assemble the savory bell pepper tart.
The first step is to make the dough, the mixed flour dough: buckwheat and the other of your choice. I usually always use less refined flours, type 1 or 2, spelt or Kamut, but choose the white flour that is most convenient and you like. In my case, I used type 1. The procedure for making the mixed dough is very simple. Put the flours, in this case, two, and the salt in a bowl. Mix and create a well in the center. Pour the water and oil inside and start to stir by slowly incorporating the flour from the edges until you form the dough as you see in the photo. You’ll see that it will be nice and soft. Now take it and let it rest in the fridge for half an hour.
Meanwhile, while the dough is resting, let’s cook the peppers. Wash them, cut them, and put them in the pan with garlic, oil, olives, and salt. Start cooking them for a few minutes, then dissolve the sugar in the vinegar and pour it over the peppers. Add a little more water and continue cooking until done.
Now let’s take the dough and have fun rolling it out with a rolling pin, as thin as you like. I usually roll it out very thin, that’s how I like it, but do it to your taste. Once rolled out on parchment paper and placed in the baking dish, prick the bottom and start filling with a layer of peppers and ricotta.
At this point, fold the edges inside the tart and sprinkle with Parmesan cheese and seeds if you like. I used pumpkin seeds. Though small, seeds provide many health benefits, and at the end of the recipe, I will give you some more information about their use and intake.
Perfect, our savory bell pepper tart is now ready to be baked. Preheat the oven in fan mode, 356°F. Once at temperature, bake for about 30/35 minutes, but always check depending on each of our ovens. Take it out, let it cool slightly and enjoy this delight.
