Ingredients
Let’s see the ingredients needed to make this recipe
- 1.5 cups flour (for the pastry)
- 3.5 tbsps extra virgin olive oil (for the pastry)
- to taste fine salt (for the pastry)
- 6 tbsps water (for the pastry)
- 1.3 lbs ground turkey meat (or any meat you prefer, pork, beef…)
- 2 teaspoons curry
- 1 teaspoon ground turmeric
- 2 teaspoons smoked paprika
- to taste extra virgin olive oil (to season ground meat during cooking)
- 12 oz beans (cannellini, dry or canned as preferred)
- 2 medium potatoes
- 4 teaspoons tomato paste
- 2 onions
- 1 clove garlic
- to taste grated Parmesan cheese
- to taste white wine (to deglaze)
Steps
To make this savory pie, I used my own pastry dough, known as ‘pasta matta’.

If you prefer, you can use ready-made pastry from the supermarket. It’s up to you.
So, after deciding which pastry to use, let’s focus on preparing the filling.
In a pan, I put two thinly sliced onions with water to cover, salt, and extra virgin olive oil. I started cooking everything covered and on low heat.
After about 10 minutes of cooking, I added the beans, you can choose either the pre-cooked ones or the dry ones (previously cooked), and two potatoes cut into small cubes. After a few more minutes, I also added the tomato paste, about 4 teaspoons.
Let it cook until the potatoes and beans are done, everything should combine to be creamy, but not watery.
Once ready, set it aside.
In another pan, put a chopped garlic clove, or whole so you can remove it later, and add the ground meat with a drizzle of extra virgin olive oil. Once it starts cooking, add curry, paprika, and turmeric.
ATTENTION➡️ I recommend trying with small quantities because these spices mixed like this give a great flavor but also heat. If you love and are used to spiciness, go for a more generous quantity (as indicated by me); otherwise, as I mentioned, start with a sprinkle, until you find the right dose that satisfies your taste.
So, add the spices and let it cook until the meat is done. If you wish, you can deglaze with a bit of white wine.
Once the meat is cooked, take the pastry from the fridge, divide the dough into two, and roll out two circles. One will be for the base, the other to cover, after placing the filling inside. If you bought ready-made pastry, you’ll need two to cover.
Roll out the first pastry circle on parchment paper, place it in the baking dish, prick the bottom and start layering a layer of beans and then a layer of ground meat.
Now take the other pastry circle, place it on top, and seal the edges.
Before baking, drizzle the surface with extra virgin olive oil and a sprinkle of grated Parmesan cheese.
Turn on the oven in convection mode and as soon as it reaches temperature, bake the pie at 350°F for about 50 minutes.
Remove from the oven and let it cool a bit, the ingredients will compact even better.
