Ingredients

  • 1 2/3 cups flour
  • 1 tsp fine salt
  • 3.5 tbsps extra virgin olive oil
  • 6 tbsps water
  • 1 1/3 cups ricotta
  • 2.1 oz gorgonzola
  • 1.8 oz pecorino (Sardo, Toscano, whichever you prefer)
  • 3.5 oz cooked ham
  • as needed milk (two fingers worth)

Steps

  • You can make the savory pie with ham and cheeses with a ready-made puff pastry or with my homemade pastry.

    For those who want to try my pastry, here is the recipe.

    Take a bowl and put in the flour and salt.

    Mix well.

    You can also work on a pastry board if you prefer, whatever you are used to.

    Now pour the oil and water into the center of the dry ingredients and start combining the ingredients.

    Gradually incorporate the flour from the edges until fully absorbed and a dough is formed.

    Once all the flour is gathered, knead with your hands and your dough will be ready.

    Let it rest in the fridge for 30 minutes and then proceed with the preparation you prefer.

    Let’s focus on making the filling.

    In a mixing bowl combine the ricotta, gorgonzola, pecorino, and chopped cooked ham.

    Add two fingers worth of milk to soften the cream.

    The filling is ready to be spread over the pastry.

  • Lay the dough in the baking pan lined with parchment paper.

    Prick the bottom of the pastry and begin to spread the prepared filling over it.

    I wanted to garnish the savory pie like a sweet pie with the classic intertwined strips.

    You can do this or opt for other decorations.

    Preheat the oven in static mode to 356 degrees Fahrenheit and once at temperature, let it bake for about 35/40 minutes.
