- flour (1 3/4 cups)
- stracchino (5.3 oz, part in the dough and the rest on the top)
- tomato sauce (8/9 tablespoons)
- olives (10, 6 sliced in the dough and the rest as decoration)
- grated parmesan (1 oz)
- milk (3.5 oz)
- mozzarella (4.2 oz, about 2.5 oz in the dough and the rest as decoration)
- fine salt (a teaspoon)
- eggs (2)
- instant yeast for savory preparations (0.4 oz)
- oregano (or basil to taste)

Steps
Let’s see the steps to make our plumcake
In a bowl beat the eggs with salt, add part of the parmesan and keep mixing.
Now add a few tablespoons of tomato sauce, about 5, the milk, and gradually the sifted flour and yeast. Also add the chopped olives, some mozzarella cubes, and a bit of stracchino.
The dough should be soft but not runny. A medium consistency. Now line a mold with parchment paper and pour the dough inside, adding on top the remaining tomato, stracchino, mozzarella, olives, grated parmesan, and if you like, you can also add some oil-preserved eggplant strips.
Bake at 350 degrees Fahrenheit, in static mode preheated for about 30/35 minutes. Always do the toothpick test before turning off the oven. The plumcake is ready to be devoured.
