Ingredients

  • 1/4 cup sugar
  • 2 cups semolina flour
  • 2 tbsp lemon juice (+ grated zest)
  • 1 pinch fine salt
  • 1 egg
  • 3 tbsp extra virgin olive oil (or any other oil if you prefer)
  • 3 tbsp raisins
  • 1 tsp baking powder
  • as needed water (to soak the raisins)

  • 1 Sieve
  • 1 Teaspoon

Steps

  • In the mixing bowl, start by adding the sifted flour and baking powder and mix them with a fork.

    Add the egg, sugar, oil, a pinch of salt, the zest, and the filtered lemon juice to the center of the dry ingredients.

    Before adding the raisins, soak them in a little warm water to rehydrate.

    Once softened, squeeze them and add to the mixture.

    Mix the liquids with the dry ingredients using a fork as much as possible.

    When the dough starts to come together, knead it by hand.

    You will get a nice soft and compact dough.

  • Break off small pieces of dough and roll them between your hands to form cookie balls.

    Place the cookies on a baking sheet lined with compostable parchment paper or a silicone mat.

    Preheat the oven and once it reaches temperature, bake at 340°F (ventilated), for about 17 minutes.

    Always adjust according to the power of your oven.
