Ingredients

Let’s see the ingredients we need to make these cookies

  • 2 cups Kamut® flour (you can also use all-purpose or whole wheat flour, all of the same type)
  • 1/2 cup whole wheat flour
  • 3 tbsp extra virgin olive oil (or seed oil works just as well)
  • 1 egg
  • to taste ground cinnamon
  • A few drops almond essence
  • 1 orange zest (grated)
  • 1 tsp baking powder
  • 1 pinch fine salt
  • 1/4 cup sugar
  • 5 oz yogurt (orange flavored)
  • to taste pistachios (or any other nuts you prefer)

Steps

  • In a bowl, break the egg and add the sugar, a pinch of salt, almond essence, cinnamon, and the grated zest of an orange (edible peel).

    Start mixing these ingredients with a fork and blend them well together.

    Now add the yogurt, oil, and baking powder, and continue mixing.

    Finally, the flour, which I recommend adding gradually to gauge absorption. In the sense that, depending on the type used, you might need a few grams more or less than the amount I listed in the ingredients.

    As you read, I made a mix between Kamut and whole wheat flour and the quantities listed are perfect, if you use only one type of flour like all-purpose, maybe you might need a bit less or slightly more, that’s why I said to add it based on how it absorbs, so you can ensure the dough is compact but soft.

  • Once the dough is ready break off pieces and roll them between your hands into balls.

    Place the balls on a baking sheet lined with parchment paper or a silicone mat, and once ready, make a small hole in the center to insert the pistachio or the nuts you prefer. Almonds or hazelnuts will also work perfectly.

    Preheat the oven to 350°F and once at temperature, bake for about 14 minutes.

    Remove from the oven and enjoy your cookies

The cookies can be stored in a glass or tin cookie jar.
