Hello dear friends, today a very simple recipe for my SOFT PEAR COOKIES, RAISINS AND CINNAMON.
They are cookies, but their softness almost reminds you more of a cake (like a snack cake).
They will be perfect to accompany breakfasts, snacks, or treats. The dough is as genuine as possible, minimal sugar but so much flavor. How about we make them together?

Ingredients
- 2 eggs
- raisins (1.4 oz)
- corn oil (2.8 oz you can also use sunflower or peanut oil)
- sugar (3.5 oz I use brown sugar, you can use the sugar you prefer)
- spelt flour (2 3/4 cups you can also use all-purpose flour)
- potato starch (1/3 cup)
- baking powder (0.6 oz)
- pears (1 or 2 depending on the size)
- to taste ground cinnamon
- powdered sugar (optional, if you like, you can add it on top)
Steps
Let’s prepare the cookies.
It will be very easy to make them. First, take a bowl and break the eggs inside with the addition of sugar, and start beating until the batter becomes nice and frothy. You can also use an electric whisk if you don’t want to do it by hand.
Now add the oil, cinnamon, and previously softened and drained raisins.
Now add the packet of vanilla baking powder, the flour, and the diced pears.
Continue mixing until the dough is compact, soft, but not liquid.
At this point, take a spoon, and let the gathered dough slide onto the parchment paper. You can help the descent of the mixture with your finger.
Put the cookies in the oven, static mode, 356 degrees Fahrenheit for about 20 minutes. You will see they will rise and remain soft, soft, like small cakes. Once baked, if you prefer, you can also add powdered sugar on top.
Storage of the cookies
The soft pear cookies, I store them in a jar or container, which I then put in the fridge. Let’s say if I have to store them for a day, I don’t put them in the fridge, but if they have to last several days, I do.
Preparations containing fruit, if left at room temperature for several days, could deteriorate, leading to mold, especially in hot months.
