Spelt Apple Cake

The spelt apple cake is a simple and genuine cake, made with spelt flour, eggs, and blended apple, sweetened with a little sugar and scented with cinnamon.

Extra virgin olive oil gives it softness, for a light but flavorful cake, perfect for breakfast or a snack.

The peculiarity of this cake, which makes it very quick to prepare, is that you can also make it in a food processor, saving time and energy.

Of course, if you don’t have a food processor you can use a bowl and fork, following the same steps.

It’s needless to say that apple cake immediately takes us to our most comfortable place, home, to cuddles, and our loved ones.

A cake to share over a great cup of tea, herbal tea, or a good coffee.

Ingredients

  • 1 1/2 cups blended apple (+ another apple for surface garnish as needed)
  • 1/4 cup brown cane sugar (or granulated white sugar)
  • 1/3 cup extra virgin olive oil
  • 2 eggs
  • 1 packet baking powder
  • 2 cups spelt flour
  • as needed lemon zest (grated)
  • 1 pinch salt

  • 1 Food Processor
  • 1 Spatula
  • 1 Knife
  • 1 Baking Pan 9 inches

Steps

  • Place the eggs, chopped apple (peeled or unpeeled, your choice), grated lemon zest, and sugar into the food processor.

    Blend until smooth and homogeneous.

    Add the extra virgin olive oil and blend for a few more seconds.

    Combine the spelt flour, a pinch of salt, cinnamon, and the sifted baking powder.

    Blend briefly, just enough to mix everything.


  • Pour the batter into an oiled and floured pan or one lined with parchment paper.

    Decorate the surface with apple slices, enough to cover it all.

    Bake in a static oven at 350°F for about 40 minutes, performing a toothpick test before removing.

    Let it cool and, if desired, finish with a sprinkle of cinnamon or powdered sugar.

Storage of Spelt Apple Cake

If it’s cool, keep the cake under a cake dome or in an airtight container for 2-3 days. It will remain soft thanks to the blended apple.

In the Refrigerator
If it’s warm or you prefer longer preservation, you can put it in the fridge, always well covered.

It stays fresh for 4-5 days. Before serving, take it out 15-20 minutes in advance: it will become softer and more fragrant again.
