I made the spelt flour bread by shaping it like a loaf, in a classic loaf pan.

Ingredients

Let’s see what we need to make spelt flour bread

  • 0.25 oz fresh yeast
  • 2 tbsps extra virgin olive oil (2 tablespoons)
  • 2 tsp salt
  • 2 cups water
  • 1 tsp sugar
  • 0.42 cups water (to dissolve the salt)
  • 6.5 cups spelt flour

  • In a bowl, pour the room temperature water, the fresh yeast, and the teaspoon of sugar.

    Mix these ingredients with a fork.

    Add the two tablespoons of olive oil and about 2.5 cups of flour and continue to mix.

    You will get a soft mixture that you will let rest for just two or three minutes.

    After this short period, add another 0.8 cups of flour.

    In a glass, pour 0.42 cups of water where you will dissolve the salt.

    Then pour into the main container and continue to stir with the fork.

    Incorporate the remaining flour and knead with your hands to get a smooth and soft dough.

    Place the bowl with the dough to rise in the turned-off oven for two hours.

    Flour or oil your hands, take back the dough that will have doubled in volume and fold the dough.

    The bread dough remains quite hydrated, so don’t worry if it seems a bit sticky to your hands.

    After this step, take the loaf pan or pans and grease all the walls.

    If you want, you can also use parchment paper to line them.

    Divide the dough into three pieces and place each one in a loaf pan.

    Using the loaf pan will give the loaves the strength to rise and become tall.

    Not to mention the softness they will acquire once baked.

    Let the bread rise in the pans for another two/three hours inside the turned-off oven.

    You will see that when the dough is ready, it will reach the rim of the pan.

    Heat the oven, static mode, to 375°F and once at temperature, bake for about 40 minutes.

    Always poke with a skewer to check that the center is cooked.

    You will get a crispy crust on the surface and a cloud of softness inside.

How to Store Spelt Flour Bread

Spelt flour bread can be stored in paper bread bags for two or three days.

Making three at a time, you can also freeze them.

I slice it and store it in freezer bags.

When I need it, I take it and heat it in the toaster or oven.

It will perfectly regain its fragrance.
