They are prepared in a very short time with a few ingredients. Obviously, it’s not a shortcrust cookie but a dough that remains very light and with a non-crumbly texture. The nice thing is that you don’t have to spend time with cookie cutters or anything else, they are distributed on the baking sheet with a spoon.

Ingredients

Let’s see the simple ingredients needed to prepare the recipe

  • whole wheat flour (1 1/4 cups)
  • Greek yogurt (1/2 cup plain)
  • honey (1 tbsp)
  • chocolate chips (1/4 cup)
  • egg white (3 large)
  • 1 teaspoon baking powder
  • to taste vanilla extract

No special tools are needed to prepare them

Steps

  • Take a bowl and pour in the whole wheat flour to form a well. In the center, start pouring the egg whites and plain Greek yogurt.

    Give it a stir and add in the center the honey, baking powder, chocolate chips, and a little vanilla extract.

    Mix and blend the ingredients well together. The dough should be compact, enough to be scooped with a spoon. If you find the dough too dense depending on your flour, add a little water or milk.

  • Line the baking sheet with parchment paper and with a spoon start to scoop the dough onto it. To scrape the dough off the spoon, I always use a spatula.

    Once the cookies are distributed, bake at 350°F, fan mode, preheated oven for about 15 minutes. The cookies, once ready, will puff up and turn nice and golden.

  • The cookies are ready to be enjoyed.

Storage and Tips

The cookies maintain their soft texture for two days, a maximum of three, inside a cookie jar. I’ve indicated only a few days because being special cookies, without butter and oil, they will obviously tend to dry out and lose their fragrance faster than traditional ones.

At our place, they don’t last more than two days, also because they are perfect for every snack, and thus, between breakfasts and other moments of the day, they are gone soon.
