The super easy and quick ciabatta bread is prepared in really little time compared to a standard rise, and making it is really simple.
I nicknamed it the BREAD WITH THE SPATULA because to prepare it we will use a baking dish and a spatula. Nothing else.
The crust will remain super crunchy and the inside soft. Unbelievable, but if you try it, you’ll let me know if I was wrong or not.

Ingredients
Let’s see the ingredients we need to make the recipe
- 1 1/3 cups water (room temperature)
- 0.35 oz fresh yeast
- 2 tbsp extra virgin olive oil
- 3 cups type 1 flour
- 1/2 cup re-milled durum wheat semolina flour
- 2 tsp fine salt

Steps
Take the baking dish and pour the water inside (room temperature), add the yeast and use the spatula to dissolve it.
Add the oil and mix. Also combine the flour, which can be of the same type if you prefer (all-purpose, bread flour, etc.), and pour the salt in the center.
Always with the spatula, mix well to combine all the ingredients and create, more than a dough, a soft and sticky mixture.
Don’t worry, it has to be like this. Cover the baking dish with plastic wrap and a dish towel and let it rest for 30 minutes.
After this first resting time, uncover the dough and with the spatula make folds in the mixture from the outside towards the inside.

If the spatula tends to stick, dust it with some flour and it will be perfect.
Now cover again with plastic wrap and dish towel and let it rise for another 30 minutes.
We need to perform 3 identical rising steps each lasting 30 minutes.
After the three rising steps, prepare a baking tray, line it with parchment paper or a silicone mat dusted with flour, and pour the dough onto it.
Now with a floured dough cutter, cut the dough into 6 pieces. If it tends to stick and the ciabatta pieces come out crooked, no problem, adjust them a bit with floured hands.
Sprinkle the surface of the small ciabattas generously with flour.
Cover the cut pieces with plastic wrap and let them rest for another 15 minutes.
Meanwhile, preheat the oven to 375°F. Place a metal saucepan with water at the bottom.
Once the oven is ready and the last 15-minute rise has passed, bake and cook for about 40 minutes.
Before turning off the oven, check the inside of the bread with a toothpick. It should be dry.
REMOVE FROM THE OVEN AND ENJOY the bread as you like best.
