Ingredients
- 2 3/4 cups Type 2 flour
- 1/4 cup whole cane sugar (or white sugar; if you want more sweetness you can increase to 6 tbsp (about 80 g))
- 2 eggs
- 1/4 cup extra virgin olive oil (EVOO)
- 1 cup part-skim milk
- 2/3 cup orange juice
- 1 sachet baking powder
- to taste lemon zest (or grated orange)
- 1 pinch salt

Steps
Prepare the freshly squeezed orange juice and set it aside for a moment.
In a large bowl, beat the eggs with the sugar using an electric mixer until the mixture is pale and fluffy.
Add to the mixture the orange juice, extra virgin olive oil, milk and a pinch of salt.
Mix again with the beaters.
Sift together the Type 2 flour and the baking powder.
Incorporate them little by little into the batter, mixing with the spatula using gentle folding motions from bottom to top so as not to deflate the mixture.
Finally add the grated lemon or orange zest, distributing it evenly through the batter for an intense, natural aroma.
Line an 8 2/3 in (22 cm) cake pan with parchment paper or lightly grease it with oil.
Pour in the batter and level the surface with a spatula.
Bake in a preheated oven at 347°F (conventional) for about 35 minutes, or until the cake is golden on top and a skewer inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes.

Yes, you can use 00 flour in the same quantity.
