Steps
Clean the Swiss chard, remove the toughest stalks, wash them well and boil in salted water for 5–7 minutes.
Drain and squeeze thoroughly, then chop coarsely.
This time, I used frozen ones and they turned out great as well, choose whichever you prefer to use.
Slice the onion thinly and sauté in a pan with water, a drizzle of extra virgin olive oil, and salt over low heat until it becomes soft.
I never fry in my recipes, but those who have tried my dishes can confirm if they lack flavor even without browning😉

Add the Swiss chard to the onion, sauté everything for a few minutes to flavor, and let it cool slightly.
In a bowl, beat the eggs with salt, Parmesan, and if you like, nutmeg or chili pepper.
Combine the Swiss chard and onion mixture with the eggs and mix well.
Pour everything into a non-stick pan, which I didn’t even grease, because I used the same one where the onions were cooked.
Cook over medium-low heat for about 8–10 minutes per side, turning the omelette with the help of a plate.
When it is well golden and cooked inside, turn off the heat and let it rest for a few minutes before serving.
Tasty suggestion: also great baked (350°F for about 20–25 minutes) enriched with cheese cubes like scamorza or pecorino.

If there’s any leftover omelette, let it cool completely.
Place it in an airtight container or wrap it well with plastic wrap.
It can be stored for 2–3 days at +39°F in the refrigerator.
To eat it, you can enjoy it cold, at room temperature, or slightly reheat it in a pan or microwave.
