Tall Fluffy Pancakes with Yogurt

The tall fluffy pancakes with yogurt will become your new favorite treats.

They are extremely easy to make and their height will surprise you at the first bite.

And then low in sugar, only 3 teaspoons for the entire recipe.

Ingredients

  • 1 egg
  • 0.5 oz sugar (approximately 3 teaspoons, add more if you prefer more sweetness)
  • 1 tbsp extra virgin olive oil
  • 1 lemon zest (about half a large lemon, otherwise the whole zest)
  • 2 tsps lemon juice
  • 0.5 cup Greek yogurt 0% fat (or low-fat yogurt, or lactose-free)
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.6 cup type 2 flour (all-purpose or cake flour is also fine)
  • 2 tbsps cornstarch
  • 2 tsps honey (I use acacia honey)

Tools

  • 1 Bowl
  • 1 Fork
  • 1 Pan
  • 1 Sieve
  • 1 Teaspoon
  • 1 Spatula

Steps

  • In a bowl start combining the liquid ingredients.

    Break the egg, add sugar, yogurt, grated lemon zest, juice, and oil.

    With a fork or a hand whisk if you prefer, start mixing.

  • Sift the flour, baking powder, baking soda, and cornstarch.

    Gradually add to the previous liquid mixture.

    Create a batter that will not be soft but rather thick.

    That’s exactly how it should be.

    Heat a lightly greased pan and once it’s hot, begin pouring a spoonful of pancake batter.

    Remember, medium-low heat not too high.

    Slightly level the batter to form a regular circle and then cover with a lid. I cooked 3 at a time.

    They should take about 3 minutes per side.

    Due to the low sugar content, once ready, I garnished with two teaspoons of acacia honey.

These pancakes can also be enjoyed by those who are lactose intolerant. Just replace the Greek yogurt with a lactose-free product.
