Tasty Octopus Salad

Welcome dear friends, today I propose my version of TASTY OCTOPUS SALAD. I believe that we have all eaten the classic octopus and potato salad at least once, at home or in a restaurant, I think we all know this excellent dish. Instead of the classic salad, I want to offer you an even tastier variant. And I also want to leave you two tips, passed down in my family, to make the octopus more tender and soft. Shall we discover them?

Ingredients

Let’s see the ingredients we need to prepare our tasty octopus salad.

  • octopus (2 lbs)
  • potatoes (3 large)
  • eggplant in oil (2 or 3 teaspoons)
  • porcini mushrooms (3 teaspoons)
  • sun-dried tomatoes in oil (3 teaspoons)
  • to taste fine salt
  • to taste extra virgin olive oil
  • lemon (optional)
  • green olives (7/8 pieces)

Steps

Let’s see the steps to prepare it and the two tricks to make it more tender to the bite.

  • If I can, I always buy fresh octopus, but frozen will do fine too.

    Wash it thoroughly under the water and then cook it in water WITHOUT SALT. I cook an octopus weighing about 2 lbs for at least 50 minutes in a pressure cooker. If using a standard pot, even an hour or more, it always depends on the weight.

    In the meantime, I also boil the potatoes. I peel and cook them. Once ready, I cut them into cubes and place them in a bowl.

    At this point, the octopus will also be cooked. IMPORTANT step. At this point, after verifying that the tines of a fork can pierce it and it is ready, turn everything off and add a teaspoon of salt to the water. The octopus should cool in its water for two or three hours. This step will make its meat remain tender, tender, and much more palatable. Now we are ready to combine all the ingredients and assemble our tasty octopus salad.

  • Cut the octopus into pieces and combine it with the potatoes, the eggplant in oil, the porcini mushrooms or if you prefer another type in oil, the sun-dried tomatoes, the green olives (I use the large ones from Cerignola) you choose the ones you like best. Since the veggies were all in oil, I didn’t add any other seasoning. Taste and adjust the salt if necessary. I almost forgot, I also added some lemon because I love it and I think it suited it very well too. You will see how tasty this salad will be.
