Steps
First, place the chicken (skinless) in a large pot with plenty of cold water.
Add the carrot, onion, cherry tomatoes, and celery washed and cut into pieces.
Bring to a boil and then simmer for about an hour, skimming off the foam that forms on the surface.
Add salt at the end of cooking.
Once ready, the broth is strained.
I leave the pieces of carrots, onion, and cherry tomatoes, which I like to find in the dish along with the tortellini.
Bring the broth back to a boil.
When the broth is hot, gently pour in the tortellini.
Let them cook for a few minutes, until they rise to the surface.
At this point, the dish is ready.
