Vegetable and Champignon Risotto

Ingredients

Let’s see the ingredients we need to prepare this recipe

  • rice (400g)
  • potatoes (150g)
  • champignon mushrooms (150g)
  • to taste fine salt
  • pumpkin (150g)
  • 1 clove garlic
  • 1 onion
  • 2 carrot
  • to taste extra virgin olive oil
  • to taste vegetable broth
  • stracchino cheese (60g)
  • to taste grated Parmesan cheese

Steps

  • Toast the rice in a pan and set aside. In another pan, sauté olive oil, minced carrot, onion, garlic, and celery.

    After a few minutes add the diced pumpkin, potatoes, and champignon mushrooms. Let them flavor and drizzle with vegetable broth to cook them.

    To make the risotto creamier, GUESS WHAT I DO? TIP I blend the vegetables I have put into the vegetable broth, making it thicker and making your risottos even creamier, try it and let me know.

    At this point, when the vegetables are tender add the previously toasted rice and cook by drizzling the creamy broth I mentioned before 😉

    When it’s cooked, no butter to cream just a sprinkle of Parmesan and in the center of the plate two teaspoons of stracchino cheese. A small amount is enough. Each of us can optionally add more, it will be even more appetizing.

Advice

If you prefer, instead of stracchino you can use another type of soft cheese. The creamy effect will be guaranteed.
