Ingredients

  • 2 eggs (at room temperature)
  • 3 oz vegetable oil
  • 2 1/4 cups flour
  • 1 packet baking powder
  • 1 pinch fine salt
  • 3 tbsp sugar (if you prefer sweeter, you can increase up to 5 tbsp)
  • 2/3 cup water (at room temperature)
  • 1/2 cup potato starch
  • as needed lemon zest (grated)
  • 6 tsp apricot jam (or your preferred choice)
  • 1 oz chocolate chips (you can use up to 1 1/4 oz for a richer cake)

  • 1 Lemon Zester

Steps

  • In a bowl, pour the room temperature eggs and sugar.

    Start whipping with the whisks, add the pinch of salt and the grated lemon or orange zest, whichever you prefer

    Vanilla or other essence also works for flavoring.

    Now gradually add the oil and water, continuing to mix with the whisks.

    After the liquids, start adding the sifted powders: flour, potato starch, and baking powder. Be careful not to use the whisks at too high a speed, or the flour will spread everywhere.😉

    Add the chocolate chips and continue to mix from bottom to top with the spatula.

  • When the batter is ready, take our 9-inch pan and butter and flour it.

    If you prefer, you can line it with compostable parchment paper.

    Pour half of the batter into the pan and add the 6 teaspoons of jam in the center part. I tell you to stay more in the center, so it doesn’t spill from the edges.

    If you want to add a few more teaspoons of jam, feel free to do so.

    Cover with the remaining batter.

    Now bake in a preheated fan oven at 350°F, for about 40 minutes.

    Always do the toothpick test before taking it out. If necessary, leave it a few minutes more or less. Always adjust based on the power of your oven.
