Ingredients

  • 1 3/4 cups whole wheat flour
  • 1/4 cup extra virgin olive oil
  • 1.4 oz water (where you cooked the apples)
  • 1/4 cup sugar
  • 2 apples
  • 4 dried plums (if you like them, otherwise just apples)
  • 2 teaspoons ground cinnamon (for cooking apples.)
  • 1 teaspoon honey (to add to the water where the apples cook)
  • 3 eggs
  • 1 pinch fine salt
  • to taste lemon zest (grated)
  • 1/2 cup Greek yogurt 0% fat
  • 1 tablespoon baking powder
  • 3/4 oz hazelnuts (chopped for garnish)

Steps

  • Let’s start by peeling the apples and after cutting them into wedges, put them in a small pot with water to cover them.

    If you like, add 4 dried plums.

    Add a teaspoon of honey and 2 teaspoons of cinnamon.

    If you love this spice, you can add more than 2 teaspoons.

    Cook the fruit until it is soft.

    Turn off and set aside.

  • In a bowl or the jar of the FOOD PROCESSOR, insert the shelled eggs, sugar, lemon zest, a pinch of salt, and mix.

    I used the processor.

    Add the EVO oil, yogurt, 1.4 oz of apple-cooking water and continue mixing (or blending if you are using the processor).

    Now add the dry ingredients, the sifted baking powder, and flour.

  • Line the mold with parchment paper or if you prefer, butter and flour it.

    My mold measures 8.7 inches.

    Pour a first layer of batter into the pan and add a part of the apples and plums on top.

    Cover with the remaining batter and with the rest of the apples left over, and then sprinkle with the chopped hazelnuts.

  • Preheat the oven to 350 degrees Fahrenheit in static mode and when it reaches temperature, bake and cook the cake for about 40 minutes.

    Always do the toothpick test before turning it off.
