Yogurt and Pomegranate Juice Pound Cake

The yogurt and pomegranate juice pound cake is a light dessert, enriched with the aroma of fruit.

I chose a berry yogurt and pomegranate to slightly vary the preparation of the classic yogurt cake that we all make.

Ingredients

Let’s see the ingredients we need to make the yogurt and pomegranate juice pound cake

  • 2 eggs
  • 1/4 cup sugar
  • 3 tbsp extra virgin olive oil (you can use corn or sunflower seed oil if you prefer)
  • 3/4 cup yogurt (berry-flavored)
  • 1/2 cup pomegranate juice
  • 2 1/2 cups all-purpose flour
  • 4 tsp baking powder
  • A few drops vanilla essence
  • 1 pinch fine salt

Tools

  • 1 Mixing bowl
  • 1 Hand whisk
  • 1 Juicer
  • 1 Pound cake pan

Steps

  • First, clean a pomegranate, deseed it and extract 1/2 cup of juice.

    Now take a mixing bowl and crack the two eggs inside, add the sugar, a pinch of salt, and start whisking with a hand whisk.

    Add 3/4 cup of berry yogurt, I chose this flavor to match the color theme with the pomegranate juice.

    Add the oil and then the pomegranate juice and continue mixing.

    Pour in a few drops of vanilla essence into the mixture.

    Finally, it’s time for the dry ingredients, add the sifted all-purpose flour and baking powder.

    You will get a soft and fluid batter, as shown in the photo below.

  • Butter and flour a pound cake pan, mine measures 9.5 inches in length by 5 inches in width.

    Pour the batter inside and bake in a preheated static oven at 356°F for about 43 minutes.

    Always do the toothpick test to check if your dessert is perfectly cooked, then remove from the oven and once lukewarm, enjoy it as is or with a sprinkle of powdered sugar.

Storage of the Pound Cake

The yogurt pound cake keeps at room temperature for two to three days under a glass dome or covered with a bag, like the ones used for Christmas panettone.

I often store desserts in these bags, and they remain perfect.
