Apple Rose Muffin Ingredients
- 3 eggs
- 1 cup g all-purpose flour
- 1 cup g cornstarch (cornflour)
- 3/4 cup g sugar
- 2 apples
- 1/4 cup ml sunflower oil
- 1 teaspoon vanilla extract
- 1/2 cup ml yogurt (vanilla flavor)
- 1/4 cup ml milk
- as needed vanilla powdered sugar (for decoration)
- as needed colored sprinkles (pink)
- 1 packet baking powder
Tools
- 1 Bowl
- 1 Electric whisk
- 6 Muffin liners
For about 12 muffins:
Beat the eggs with the sugar for at least 10 minutes until they become frothy and double in volume. Once ready, add the oil in a thin stream and the milk, continue to mix, add the vanilla yogurt, the extract, and the sifted flours.
The batter should be light and velvety, now add the sifted baking powder, making sure no lumps form. In the meantime, peel the apples, cut them into not too large cubes, and add them to the mixture.
Mix very gently, pour the batter into the rose molds or alternatively into classic muffin liners.
Bake in the preheated static oven at 350°F (adjust according to your oven) for about 25 minutes, until they turn golden.
Before removing them from the oven, always do the toothpick test, remove the muffins from the mold only after they have cooled. Before serving, decorate with colored sprinkles and vanilla powdered sugar. 😉

Preservation and Variations
The rose muffins can also be made with other fruits or with chocolate chips. To have muffins always fresh and as if just baked, simply freeze them in appropriate bags and take them out the night before. Alternatively, you can take them out of the freezer when needed and place them in the oven for a few minutes. Trust me, you’ll always have a fresh breakfast!
