The Befana cupcakes are simple and super delicious treats, capable of enchanting children and winning over adults. The real magic is that they are ready in just 30 minutes! A truly lovely idea to bring the joy of Epiphany to the table. While the base bakes in the oven, releasing a delightful aroma, we will dedicate ourselves together to a soft mascarpone frosting. Befana Cupcake Ingredients

  • 1.75 cups all-purpose flour
  • 4 eggs (Not too large)
  • 2/3 cup sugar
  • 9 tbsp butter (Cut into pieces and at room temperature)
  • 1 pinch salt
  • 2 tsp baking powder
  • 2 tsp vanilla (Alternatively, a vanilla bean)
  • 2 tbsp milk
  • 1.1 cup mascarpone
  • 1/3 cup vanilla powdered sugar
  • to taste food coloring (purple or lilac)
  • to taste colored sprinkles (Befana sprinkles)

Befana Cupcake Steps

  • In a bowl, place the butter in pieces at room temperature and add the powdered sugar. Also add the teaspoons of vanilla and with the electric whisk, mix the ingredients together. We need to obtain a fluffy and soft mixture; when the ingredients are well combined, add the eggs one by one.

  • After the eggs are well incorporated, slowly add the flour with the baking powder and finally the pinch of salt. Always with the whisk, create a smooth and compact dough. Finally, add the tablespoons of milk.

  • Once the dough is well mixed, pour it into the cupcake liners placed on a muffin tray. Bake in a preheated oven at 355°F for about 25/30 minutes. The cooking time is indicative, always adjust with your oven and before taking them out, always do the toothpick test.

  • While the cupcakes cool, it’s time to think about the frosting: place the mascarpone in a bowl, add the vanilla powdered sugar, and start whipping with the electric whisk, gradually adding the food coloring. I used the powdered one, a little at a time until reaching the desired shade. You can also use gel food coloring, but I do not recommend the liquid one.

  • Regarding the creaminess of the frosting, we adjust it ourselves, but it takes very little! (Here you’ll find other frostings)
    Once the frosting is ready, put it in a piping bag with a star tip and let it rest in the fridge, while the cupcakes are completely cooled. When the desserts are ready, decorate them with the mascarpone frosting, finish with the sugar sprinkles and Befana sprinkles..

If the cupcakes are not consumed on the same day, they should be stored in the fridge due to the frosting. Before serving, take them out about half an hour in advance.
