The bunny cookies are very sweet and beautiful for Easter, they are easy to prepare, in fact you don’t need molds and it takes very little time. They can also be made on a stick like cake pops, they are loved by children and are perfect as a gift idea. They also make beautiful place cards, perhaps with a different colored bow for each one!   • 2 1/2 cups all-purpose flour
  • 1 egg
  • 1/2 cup sugar
  • 1/2 cup butter (cold in pieces)
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 as needed egg white
  • as needed dark chocolate chips
  • as needed sugar sprinkles

Bunny Cookies Steps

  • In a large bowl, pour the flour and cold butter from the fridge, start kneading until you have a sandy mixture, then add the egg,

  • the sugar, the pinch of salt, and the vanilla extract. Knead until you create a smooth dough, once ready, cover it with plastic wrap and let it rest for half an hour in the fridge.

  • After the time has passed, cut small pieces of dough “about 80/100 g” depending on how large you want the bunny cookies. Create a cord and wrap it on itself, then make 2 balls, one large for the head and the other small for the tail. Finally, the ears, assemble all the parts by brushing with some egg white.

  • To finish, if we want to make them like cake pops, insert the stick and add a chocolate chip to create the eye. Brush everything with a bit of egg white and decorate with sugar sprinkles. Place the cookies on a baking sheet lined with parchment paper and bake in a static oven at 350°F for about 15/20 minutes.

  • Remember that baking time is indicative, so always adjust with your own oven. Once baked, remove them and let them cool, remember to take them from the stick only when they are completely cooled and enjoy!
