Steps for Gluten-Free Cookies
In a large bowl, pour the oil and add the sugar with the almond milk. Mix the ingredients with a hand whisk, and after mixing well, add the almond flour.
Mix the dough well and add the teaspoon of baking powder, continuing to knead. Even if the dough seems a bit soft, do not worry. Finally, add the dark chocolate chips. If you do not like dark chocolate, milk chocolate chips will work as well.
Now, use an ice cream scoop to shape each cookie, place the cookies on a baking sheet lined with parchment paper, and bake in the oven at 356°F for about 15/20 minutes. Remember that temperature and baking time are indicative, always adjust according to your oven.
Once the cookies are ready, remove them from the oven and let them cool on a cooling rack. The gluten-free cookies have a different consistency from the classic ones and remain very soft, also due to the almond flour.
