Grape and Yogurt Plumcake

Grape and Yogurt Plumcake Ingredients

  • 10.5 oz white grapes
  • 1.5 cups all-purpose flour
  • 0.5 cup brown sugar
  • 0.63 cup plain natural yogurt
  • 3.5 tbsp sunflower oil
  • 1 pinch salt
  • 1 lemon (grated zest)
  • 1 packet baking powder
  • as needed sugar sprinkles
  • 3 eggs

Preparing Grape and Yogurt Plumcake

Wash the grapes and halve the berries, taking care to remove the seeds. Set them aside for later.

  • Let’s start preparing the batter: in the bowl of the stand mixer, beat the eggs with the sugar to get a nice frothy mixture.

  • Then add the sunflower oil and plain yogurt, work with the whisks until you get a soft cream. Add the sifted flour, baking powder, grated lemon zest, and a pinch of salt gradually.

  • The final mixture should be nice and smooth without lumps. Incorporate the grape berries and mix well to blend them in. Now pour the batter into the plumcake mold lined with parchment paper, or a disposable plumcake mold.

  • Garnish with sugar sprinkles and bake in a preheated oven at 350°F for about 40 minutes. If it tends to darken too much on the surface during baking, just cover it with a sheet of aluminum foil and continue baking.

  • Open the oven only if 30 minutes have passed, check the baking and if it’s still not ready, lower the temperature to 340°F and finish baking still covered with aluminum foil. Always do the toothpick test before taking it out of the oven.

  • Let the grape plumcake cool for half an hour in the mold and then on a cooling rack.
