Ingredients for Kiwi and Yogurt Cake
- 2 cups spelt flour
- 3 kiwi
- 1 orange (juice + grated zest)
- 4 tbsps butter (melted)
- 2 eggs
- 2/3 cup brown sugar (light)
- 1 teaspoon vanilla extract
- 1 container plain natural yogurt (or vanilla)
- 1 packet baking powder (16 g)
- as needed vanilla-flavored powdered sugar
- 1 tablespoon brown sugar (for decorating)

Preparation of Kiwi and Yogurt Cake
Let’s take the kiwis: peel them and cut them into cubes, place them in a bowl with the orange juice and grated zest. Set them aside for later, in the meantime beat the eggs with the sugar for at least 5 minutes, until they become light and fluffy. Once ready, gradually add the flour and sifted baking powder; mix with a wooden spoon to incorporate them. Be careful not to deflate the mixture and not to create lumps.
Add the melted butter, yogurt, and vanilla extract, gently mix the batter until it becomes nicely uniform. Now pour in the kiwis we prepared earlier.
Grease and flour the mold, pour the mixture and level it well. Finally, lay kiwi pieces on top and sprinkle the cake with brown sugar.
Bake in a static oven at 350°F for about 35/40 minutes, temperature and time are always indicative, always adjust to your own oven. Take it out of the oven and let the cake cool on a wire rack. Before serving, dust with vanilla-flavored powdered sugar and enjoy!
