Ingredients for Quick Peach Cake

  • 1 2/3 cups all-purpose flour
  • 1/4 cup cornstarch
  • 2 eggs
  • 2/3 cup sugar
  • 1/4 cup sunflower oil
  • 1/4 cup milk
  • 1 pinch salt
  • 1 tsp vanilla extract
  • Half packet baking powder (about 8 grams)
  • 3 yellow peaches (Alternatively 2 large)

  • Springform Pan – 9-inch diameter
  • 1 Electric Whisk
  • Wooden Spoon

    Beat the eggs with the sugar until they are light and fluffy, continuing to whisk, add the sunflower oil. Once ready, add the sifted flours and baking powder.

  • Mix with a wooden spoon, being careful not to deflate the mixture, also add the pinch of salt. When the dough starts to become more compact, alternate the flour with some milk until finished.

  • Add the vanilla extract. Then peel the peaches, cut them into cubes, and add them to the batter. Line the cake tin with parchment paper and pour the mixture in, trying to level it well. Bake in the oven at 350°F for about 40 minutes, be careful with the baking, as the peaches might deceive you, so always do the toothpick test.
