Ingredients

  • 7 oz crackers (can be salted or not)
  • 1/2 cup butter
  • 12 oz mascarpone
  • 9 oz ricotta
  • 9 oz smoked salmon
  • 1/2 cup crushed pistachios

Steps

  • To prepare the salmon cheesecake, start by finely blending the crackers using a kitchen mixer. Then, in a bowl, pour the butter and melt it in the microwave, or a saucepan on the stove works fine too. Once melted, add it to the crackers.

  • Pour the mixture into a 20/22 cm springform pan and compact the base well using the back of a spoon. Now put the base in the fridge to rest, in the meantime, focus on the filling.

  • In a large bowl, pour the mascarpone and ricotta, work the mixture for a few minutes by combining it with a fork. Chop the smoked salmon into small pieces, but leave a small portion for the final decoration.

  • Add the chopped salmon to the cheese mix and blend well, place the mixture over the crackers base, refrigerate for at least 3 hours. Half an hour before serving the savory cheesecake, decorate the top with crushed pistachios and smoked salmon, and enjoy!
