The soft grape cake is super delicious, easy, and quick to prepare. The simple and genuine dough does not contain butter, and I find it perfect for this early autumn period, especially for breakfast. After obtaining a soft and fluffy dough, add the seedless grape berries cut in half. If you prefer to have the fruit on top of the cake as well, just put half of it in the dough and the rest on the surface. The result will be perfect in both variations.

Steps for Soft Grape Cake
To prepare the soft grape cake, let’s start by preparing the grapes: wash them, cut them into pieces, and remove the seeds.
Then, in a bowl, place the eggs with the sugar and beat them with the electric mixer until you have a soft and creamy mixture.
Now add the flour and mix well, “always with the mixer” then add the cornstarch, continue to work the mixture, which should be nice and soft and free of lumps.
Pour the sunflower oil and then the milk, when all the ingredients are well incorporated, add the vanillin and the baking powder.
If you wish to have the grapes on the surface as well, add only half of the fruit to the dough; then pour the mixture into the mold and level it well, then distribute the remaining grapes on top. (To keep the fruit on the surface of the cake, before distributing it, pass it in the flour, just a few tablespoons).
Bake in a static oven at 350°F for about 40/45 minutes, the cooking time is indicative, so always adjust according to your oven. After 40 minutes, do the toothpick test, if ready, take it out and let it cool well on a rack. Before serving, dust with powdered sugar and enjoy your treat!
Storing the Soft Grape Cake
The cake keeps soft for 3 days when covered with cling film.
