Ingredients for Strawberry Tree Jam
- 2.2 lbs strawberry trees
- 1 cup sugar
- to taste lemon zest (untreated)

Preparation: Strawberry Tree Jam
Always sterilize jars before starting the jam preparation. I recommend this sterilizer with thermometer, it is really useful; it fits all pots with a 24 cm diameter. The lid has a thermometer to monitor the temperature while sterilizing the jars; I find it really excellent!
Quickly wash the strawberry trees, but be careful because they are very delicate. Place them in a covered pan and bring to boil; they should cook on low heat for about 20 minutes. Crush them with a wooden spoon, stirring from time to time. If you notice that the water released during cooking is little, add half a cup.When cooking is done, take the puree and strain it through a sieve to remove all the seeds; this is the most annoying step, maybe help yourself with a spoon. Once this work is finished, add the sugar; if you want a sweeter jam, you can add up to a maximum of 2 cups. But remember that the strawberry tree is quite sweet. Mix well and flavor by adding the lemon zest, preferably julienne cut. Be careful to remove the white part, as it’s bitter and could be unpleasant when enjoying the jam.
After removing the seeds, put the mixture back on low heat for about 20 minutes, stirring constantly. When the strawberry tree jam is thick, pour it hot into the previously sterilized jars.
Make sure to leave 1 centimeter from the rim before sealing the jars. Turn them upside down to ensure a vacuum seal and let them cool. Enjoy your treat!If you want to know more about the strawberrytreeplant

Jam Storage
Store the jam for up to 6 months, be careful when opening the jar to check the integrity of the vacuum seal. Always check that there are no traces of mold under the lid.

Can strawberry tree jam be too runny after preparation?
It’s unlikely that strawberry tree jam will be too runny, as these fruits are a good source of pectin, a substance with gelling properties. Be very careful and do not add water during cooking if it’s not necessary. If the jam doesn’t thicken and appears too runny, cook it for a few more minutes, adding a chopped apple, as apples are also rich in pectin.
