Here are my air fryer gratinated tomatoes, the second recipe I tried with my new 2.5-liter air fryer, which I’m really happy with.
With this second recipe, I did two tests in one:
One, cooking the gratinated tomatoes in the air fryer (ahh come on, you guessed it, didn’t you?? 😅) instead of the classic way at my home;
Two, using the famous (or infamous? 🤪) artichoke gomasio that I promised to experiment with, and finally, here is the first test!

Ingredients
- 6 ripe fresh tomatoes
- 2 oz breadcrumbs
- 1 tbsp artichoke gomasio
- basil (to taste)
- 1 tbsp extra virgin olive oil
- 1 clove garlic (small)

Steps
First, wash the tomatoes and cut them in half lengthwise, then remove the seeds.
☝ As you know, I’ve learned not to throw away tomato seeds because they can become a winter delicacy simply by freezing them. If you’ve never tried it, I recommend you try it today!
Place the tomatoes on the grill of the basket.
👉 As you can see from the next photo, I had one tomato left out. But I suggest you add it anyway, even if you have to place the two halves vertically or stacked, because after a few minutes of cooking, the tomatoes soften (and shrink), making room for the previously excluded halves. 😉
Close the basket and turn on the air fryer at 392°F and set the time to 7 minutes.
Flip the tomatoes and continue cooking for another 2-3 minutes, just enough time to let the moisture that has collected in the tomatoes drain.
While the tomatoes are cooking, prepare the filling.
Simply: add the gomasio, basil, minced garlic, and oil to the breadcrumbs.
👉 I used my artichoke gomasio, but celery salt one, or ‘natural’ gomasio works well too.
Remove the tomatoes from the basket and fill them with the seasoned breadcrumbs.
👉 Press the filling lightly with your fingertips or the back of a teaspoon to compact it.
Place the tomatoes back in the basket, with the filling facing up, and turn on the air fryer again to gratinate them (a few minutes are enough, adjust to the level of gratination you like).
They are delicious! Try them!
☝ And if you’re wondering if the artichoke powder in the gomasio alters the taste of the stuffed tomatoes… the answer is no. 😊 The gomasio flavored with artichoke powder is not dominant in the filling.
I can confirm this after receiving praise (with a simple but important: ‘these tomatoes are so good’) from both my husband and Flavia, the two members of my family jury who did the test (both unaware of the added gomasio 😃)!!! 💪
Salt-Free Tips
Today’s tips:
No need to salt these air fryer gratinated tomatoes because the gomasio acts as a flavor enhancer.
Also, cooking tomatoes this fast way and without any spillage preserves their true flavor. If you can, buy quality tomatoes, it’s worth it, and you’ll taste how good they are cooked this way. 😉
If you’re interested in reducing or eliminating salt, always remember to:
▫ Reduce salt gradually, the palate needs to get used to it slowly and shouldn’t notice the progressive reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use intense flavor dressings like vinegar, wine, or balsamic.
▫ Use my salt-free vegetable granules and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer cooking methods that do not disperse flavors (grill, foil, steam, microwave).
▫ Avoid bringing the salt shaker to the table!
▫ Occasionally allow yourself a break from the rule. It’s good for your mood and helps you persevere.
