It had been a while since I made a dessert, so today I decided to prepare amaretti kisses, the easiest sweet treats I know.
I know, it’s not a new and unknown dessert, but I have my own variant, could it be otherwise? 😃
My version, adopted for years now, after the birth of my children, is with barley coffee instead of regular coffee. To make this treat suitable for kids. 😊

Ingredients
- 1 package amaretti (usually 200 g)
- to taste barley coffee (about 150 g depending on how much the amaretti absorb)
- to taste hazelnut cream (about 3 tablespoons)
- to taste grated coconut (about 3 tablespoons)

Steps
Prepare barley coffee in your preferred method, instant is fine too. For one package of amaretti, a medium-sized cup is more than enough.
Dip an amaretto in barley coffee and spread it with hazelnut cream.
👉 Today I tried the two-color cream for the first time, but I usually use the traditional one. (And for an even more indulgent version, you can use a mix of hazelnut cream and mascarpone).
For my personal taste, I found the two-color cream to be sweeter, and it was definitely appreciated by my kids. 😊
Regarding quantity, I put about a teaspoon (small, coffee size) of hazelnut cream on each kiss, but in this type of treat, personal taste allows for as much as you like.
Dip a second amaretto and pair it with the first one (the one spread with cream).
☝ Advice, from experience, use barley coffee that is not hot, but warm or cold (not too cold, room temperature is fine) and dip the amaretto quickly without keeping it submerged in the coffee too long, otherwise it gets too wet and breaks.
👉 Alternatively, you can dip the already paired amaretti, always using cold coffee to avoid melting the hazelnut cream.
Pour the coconut flour onto a plate.
Roll the amaretti kisses in coconut until they are well covered.
Arrange the amaretti kisses on a tray.
Optionally, for a better presentation, place them in paper cups.
Place the kisses in the refrigerator for at least one hour (if your children allow it!) before serving.
😉 But try letting them rest longer (maybe preparing them the day before), they will be even better! In this case, I recommend not leaving them uncovered in the fridge but placing them in a container or covering them with plastic wrap or foil.

☕ Of course, you can use regular coffee instead of barley coffee. But if you have small children and think like me regarding caffeine intake for kids, I assure you that the final result of these amaretti kisses will not disappoint you, even using barley coffee. 😉
