Apple and Raisin Puffs

Apple puffs are a timeless classic recipe. They remind us of childhood and traditional recipes.

For me, apple puffs bring to mind the image of an old pastry shop and its well-stocked counter. When I was a child, among the pastries, apple puffs were the ones that attracted me the most. Eating them gave me a sense of an unreachable pastry, an impossible recipe to replicate at home.

At that time, puff pastry was not made at home, at least not in my house (and well, not even now, even though I promised myself to do it for years 😂) and packaged puff pastry did not exist or, if it did, my mom didn’t buy it. For this reason, all puff pastries, including apple puffs, I considered only “from the bakery” and not replicable by us inexperienced in pastry art.

Given these premises, it’s needless to say that the advent of pre-packaged puff pastry rolls at our place was an almost revolutionary moment. It allowed my mom and me, more or less a teenager, to try recipes we never tried before like savory pies, to update appetizers with innovative finger foods, and to bake quick desserts, simply made of puff pastry and jam, or Nutella.

All of this now seems normal, recipes with puff pastry are labeled by everyone as quick, easy, and accessible to all. But I can assure you that back then it was an achievement, a perfect innovation in the 80s style.

For years now, I’ve been experiencing the reverse evolution. I’ve (almost) completely stopped buying the fabulous packaged puff pastry. 😀 Age and greater attention to health, awareness of the ingredients, the discovery of the healthier and lighter crazy dough, have led me to my current way of cooking, which is definitely more careful than it was a decade or more ago.

But an indulgence now and then, for an occasion, an invitation to friends’ home, or to please the kids who sometimes complain about the too light desserts 😅… oh well, yes, from time to time I can give them two apple puffs! (This way they also eat fruit! 🤪)

Ingredients

  • 1 sheet puff pastry (rectangular)
  • 2 apples
  • 3 tablespoons apricot jam
  • 2 tablespoons raisins

Tools

Steps

  • For these excellent puffs you only need 4 ingredients: puff pastry, apples, raisins, and jam. 😊

  • Unroll the puff pastry and cut it into six parts.

    Spread with apricot jam (peach jam is also fine).

  • Slice the apples thinly.

    Soak the raisins in a little water (or fruit juice of your choice).

    Arrange the apple slices, in a row and slightly overlapping, in the center of each piece of puff pastry.

    Fold the four edges of each piece of pastry.

  • The apple slices can be arranged in one or two rows, depending on the size of the slices.

  • Brush the apples and the edges of the pastry with a layer of jam.

    Drain the raisins from the water and pat them dry with a cloth or kitchen paper.

    Scatter the raisins over the apples.

  • Place the puffs on a baking tray and bake at 350°F.

    Bake for about 14-15 minutes (no longer).

    Enjoy them warm, but they are also excellent cold.

    Perfect for a snack, fabulous for a coffee break or the 5 o’clock tea, but they are also a beautiful dessert after a meal, and always appreciated by everyone. 😋

  • What jam is used in apple puffs?

    You can use apricot jam, but peach jam is also perfect. Orange marmalade is also excellent.
