Apple, Grape, and Date Cobbler

If you’ve been following me for a while, you already know how much I love Peach Cobbler, the typical American peach pie, which I discovered thanks to a movie and whose history linked to American pioneers I became passionate about.

After repeating the peach pie several times during the summer, I decided to try the version with apples, the Apple Cobbler, which is equally popular in the States.

The Cobblers, at this point with every type of fruit, have become my favorite dessert! 😃

It is a dessert that always turns out great and is suitable for all occasions. Very quick to make, it is excellent for a snack and breakfast, and it presents very well as a dessert after a meal. And everyone likes it, even those kids who usually don’t eat fruit!

Today I tried the version with apples with grapes and dates to give an autumn touch to the recipe, especially for the Light and Tasty column that dedicates the release, precisely, to autumn ingredients. For the occasion, I slightly varied the dough compared to that of the peach cobbler, replacing butter with oil and increasing the amount of flour a bit. The result was excellent, we gobbled up this Apple, Grape, and Date Cobbler! 😃😋

Ingredients

  • 2 apples (about 10.5 oz)
  • grapes (10-15 grapes)
  • dates (3 or 4, to taste)
  • 1 tablespoon sugar
  • 1 tablespoon rum
  • 2 teaspoons cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/4 cup corn oil
  • 1/4 cup sugar
  • 1/4 cup water (hot)
  • 1 teaspoon vanilla extract
  • almonds (for decoration)

  • Spoon

Steps

  • Wash and cut the apple into pieces (I didn’t peel it, but you can).

    Wash and cut the grapes in half.

    Cut the dates into pieces after removing the pit.

    Place the fruit in the baking dish (ideally a glass pie dish), the same one in which the finished dessert will be served.

  • Pour the rum, cornstarch, and sugar over the fruit and mix everything.

    Bake and cook for about 15 minutes at 350-400°F.

  • In the meantime, while the fruit is cooking, prepare the dough:

    Pour the flour, baking powder, oil, and water into a bowl.

    Mix with a spoon until you get a soft dough.

    Flavor with vanilla extract (alternatively, a sprinkle of cinnamon is fine).

    Remove the now cooked fruit from the oven (do not turn off the oven) and take the dough by spoonfuls.

  • Pour spoonfuls of dough over the fruit.

    You can leave the spoonfuls of dough visible, so that the surface of the dessert is uneven, or you can level it with the back of the spoon. The final appearance of the surface should still be rustic.

    Decorate with some coarsely chopped almonds (but they can also be left whole).

    Bake again and cook for 15-20 minutes at 350°F, until golden brown.

  • Serve the Apple, Grape, and Date Cobbler, warm or cold, portioning it with a spoon into small bowls or plates.
