Apple, Kiwi, and Kefir Smoothie (and Walnuts)

Dear friends, today it’s time for a non-recipe! A very simple apple and kiwi smoothie to which I added a few tablespoons of kefir (my beloved homemade kefir) and a little sugar, and finished with a walnut topping roughly chopped. However, it is not just a topping, because upon tasting, it turned out to be essential in the taste and deliciousness of the whole. 😋

A smoothie I made in two minutes with what I had in the fruit bowl (that is, only apple and kiwi) to use the blender attachment of my stand mixer. An accessory that I hadn’t used for a long time because the placement in my kitchen of my stand mixer is unfortunately not the most logical (yes, you have to deal with the space you have 😂), and therefore mounting and unmounting the blender every time is not easy for me, and I usually end up not using it. But today I had to move the stand mixer due to kitchen work, so I took advantage of it to use the blender (and check if it still works! 😃).

And… hey, it works perfectly!! And now? What do I do? Now I have to find a new place for this stand mixer!!! 😄

Ingredients

  • 1 apple
  • 1 kiwi
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar
  • 4 tablespoons milk kefir
  • 3 walnuts

Tools

  • Blender included with the Russell Hobbs stand mixer

Steps

  • Peel the apple and the kiwi.

    Cut apple and kiwi into pieces and place them in the blender jar.

    Add the sugar, lemon juice, and kefir.

    Start the blender at the lowest speed.

    After a few seconds, when the fruit pieces are roughly chopped, gradually increase the speed.

    As soon as the maximum speed is reached, turn it off immediately.

  • 👉 Alternatively, a simple immersion blender or a chopper cup (such as this one) can be used.

    The apple, kiwi, and kefir smoothie is ready.

  • Finish with chopped walnuts, either with a knife or roughly broken by hand.

    🌞 An addition I recommend, for me they are just the right complement. 😋😊

    Serve immediately to keep the properties intact (especially vitamin C).

  • If not consumed all at once, the apple and kiwi kefir smoothie can be stored in the fridge in a closed container for a few days. I kept it for three days, and it was delicious, with only a slight surface oxidation that disappeared with a quick stir.

  • Alternatively, leftover smoothie can be used as an ingredient in a cake or muffins, like the fruit blended cake (and muffins) or to make cookies like the anti-waste lemon and orange cookies.

    Or even… like these anti-waste bars that I specifically made, and they turned out so well that I won’t miss writing you the recipe! 😃

    And now I must go… heading for the second batch!!! 💪
