Here is the new recipe: simple apple muffins made with healthy ingredients, ideal for breakfast or as a snack for children.
Egg-free.
Butter-free, made with oil instead.
With kefir (or yogurt, as always).
With apple or, if desired, other fruits of choice.
That’s it. There’s not much else to add. Except that everything is mixed with a spoon and the time it takes to peel the apple and weigh the ingredients determines the preparation time. Excludes baking time. 🙂

Ingredients
- 1 3/4 cups all-purpose flour
- 1 tablespoon cornstarch (heaping)
- 2/3 cup milk kefir (or plain yogurt)
- 1/2 cup sugar
- 1/4 cup corn oil
- 1 apple (small or half a large apple)
- 1 teaspoon baking powder
- Half lemon (juice)
- cinnamon (to taste)
Tools
- Sieve
- Bowl
- Muffin Pans
- Oven
Steps
Sift the flour with the baking powder and the tablespoon of cornstarch.
Pour the kefir (or yogurt) and oil into a bowl and combine with the sugar. Mix with a spoon to dissolve the sugar.
Add the flour, combined with the baking powder and cornstarch, stirring with the spoon.
Lastly, add the lemon juice, mix again to distribute it.
Pour the mixture into a muffin mold (I use silicone) for 6. (*)
Now peel the apple and cut it into small pieces.
Insert the apple pieces into the mixture, submerging them just below the surface.
Dust with ground cinnamon to taste before baking.
Bake in a static oven at 392°F for about 20 minutes.
Always adapt the baking time to your oven.After baking, they will be nice and soft: try eating them warm, you’ll love them! 😉

Depending on the size of the mold, the mixture obtained with these ingredients may be enough for 8 muffins, or you can divide the mixture into 12 to obtain smaller muffins: in this case, reduce the baking time by a few minutes. 😉Enjoy your breakfast!
