Are you awake? Great! Then you need my breakfast cookies!

With this recipe, I wish you a good morning! 😀

If you want to have breakfast with freshly baked cookies, just grab flour, butter, sugar, and an egg, and in no time you can enjoy these super easy cookies made with my very easy shortcrust pastry!

For the preparation of the pastry, I could refer you to my now “famous” classic shortcrust pastry recipe, but to make things easier for you, I will still list the ingredients (which I have changed very little) to which you will only need to add some Smarties, useful both as decoration and for that slight chocolatey note, which is a treat first thing in the morning.

These simple little cookies are also perfect to make with your children; adding the chocolate buttons will be fun even for the little ones. 🌸

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2/3 cup sugar
  • 5.6 oz butter
  • 1 egg
  • 2 tbsps milk
  • 1 tsp baking powder
  • vanillin (optional)
  • Smarties (chocolate buttons or lentils)
  • powdered sugar (optional)

Steps

  • Pour the flour into a large bowl and make a well in the center. Add the baking powder.

    Add the sugar, egg, softened butter in pieces, and vanilla (if you want to use it, it’s not essential).

    Work with your fingertips until all the sugar granules are dissolved, being careful not to warm the butter, then gradually incorporate the flour. Initially, the dough will crumble, but keep going: as you work it, the dough will come together without any problems. If necessary, if the dough is too dry (which can depend on the flour, some types absorb more liquid), you can moisten it with a little milk.

    Once you have a ball, it should be placed in the refrigerator for half an hour before using it. However, if you’re in a hurry, you can proceed directly with making the cookies; nothing will happen. I can suggest preparing the first cookies with part of the dough while keeping the rest in the fridge, so you avoid over-warming the dough that’s not being worked at the moment.

    Use the cookie cutters you prefer, but if you want to use Smarties, I recommend a round or flower shape, then place the cookies on a baking sheet lined with parchment paper.

    Bake for 15 minutes at 356-392°F (180-200°C).

    Final touch: a light dusting of powdered sugar.
