Are you awake? Great! Then you need my breakfast cookies!

With this recipe I wish you a good morning! 😀

If you want to have freshly baked cookies for breakfast all you need is flour, butter, sugar and an egg and in no time you can enjoy these very easy cookies made with my super easy shortcrust pastry!

For the shortcrust pastry preparation I could refer you to my now “famous” classic shortcrust pastry recipe, but to make things easier I’ll list the ingredients here anyway (I’ve changed them very slightly) — you will only need to add some Smarties, useful both as decoration and to add that slight chocolatey note that doesn’t hurt first thing in the morning.

These simple little cookies are also perfect to make with your children: adding the chocolate buttons will be fun even for the little ones. 🌸

Ingredients

  • 2 1/4 cups all-purpose flour (type 0)
  • 6 tbsp + 2 tsp granulated sugar
  • 6 tbsp butter (soft, about 80 g)
  • 1 egg
  • 2 tbsp milk
  • 1 tsp baking powder (for sweets)
  • vanillin (optional)
  • Smarties (chocolate button candies)
  • powdered sugar (optional)

Steps

  • Pour the flour into a large bowl and make a well in the center. Add the baking powder.

    Add the sugar, the egg, the soft butter in pieces and the vanillin (if you want to use it — it’s not essential).

    Work with your fingertips until the sugar grains are all dissolved, taking care not to warm the butter; then gradually incorporate the flour. At first the dough will crumble, but continue without doubt: by working it, the dough will come together without problems. If necessary, if the dough seems too dry (this can depend on the flour; some types absorb more liquid), you can moisten it with a very little milk.

    Once you have a ball, it should be placed in the refrigerator for half an hour before using. However, if you’re in a hurry you can proceed directly to making the cookies, nothing bad will happen. If you like, I can suggest preparing the first cookies with part of the dough while you keep the rest in the fridge, so you won’t risk overheating the portion you’re not working on.

    Use the shapes you prefer, but if you plan to use Smarties I recommend a round or flower shape. Place the cookies on a baking sheet lined with parchment paper.

    Bake for 15 minutes at 356–392°F.

    Final touch: a light dusting of powdered sugar.
